Chocolate and Banana Oat Cupcakes

IMG_9054Olá minhas queridas leitoras!! Eu adoro doces, se pudesse comer só doces acredita que o fazia (apesar de ser muito muito mau!). Estamos no Verão e com isso é preciso ter cuidado com a linha ou pelo menos tentar, eheh...por isso aqui está uma receita super saborosa e que é saudável, whhaaa....isso mesmo!!

Hello my dear readers!! I'm definitely a girl with a sweet tooth, I could live with just dessert (which would be very very bad!). Well it's Summer time, which means beach season, which means controlling what you eat, or at least trying, eheh...so here's a super delicious and healthy dessert recipe, whaaaa...that's right!



IMG_9029No inicio do Verão optei por me dedicar a sério a uma dieta saudável, e até agora tem corrido bem, tenho substituído alguns alimentos por outros e introduzido muito mais vegetais e fruta, mas abdicar de doces é mesmo muito difícil para mim (o meu ponto fraco!), sendo assim fiz um compromisso, fazer sobremesas saudáveis! Na verdade achei que ia odiar, o sabor não ia ser igual (ou pior!), e que ia acabar por voltar aos meus doces normais...mas enganei me! Estou a adorar, e acredita que o sabor é melhor porque sabes que te está a fazer bem!

In the beginning of the Summer I decided I was going to stick to a healthier diet, and until now it's been going well, I've switched up some ingredients for healthier ones and introduced more vegetables and fruit, but giving up sweets has been a struggle (my sweet spot...eheh), so I've made a compromise, I started eating healthier desserts! To tell the truth I thought I was going to hate it, the taste wouldn't be the same (or worse!), and I would go back to normal desserts....but I was wrong! I've been loving it, and believe me the taste is better because you know you're eating something healthy...win,win!

Os cupcakes são feitos com bananas, aveia e iogurte grego natural...alimentos que eu adoro! São muito macios e fofinhos e como tem o chocolate dá a sensação imediata de estar a comer uma sobremesa!

Ingredientes:IMG_9058

  •  1 chávena de Iogurte Grego Natural

  •  2 Bananas

  •  2 ovos

  •  2 chávenas de flocos de Aveia

  •  1/4 chávena de açúcar amarelo

  •  1 1/2 colher de chá de fermento em pó

  •  1/2 colher de chá bicarbonato de sódio

  •  1/2 chávena de pepitas de chocolate

Instruções:

  1. Pré-aqueça o fogão a 200 graus.

  2. Combine todos os ingredientes, excepto o chocolate, num liquidificador, processador de alimentos ou então numa tigela e passe com uma varinha mágica. A massa deve ficar suave e cremosa, é normal ficar com pedaços. Depois combine as pepitas de chocolate à mão.

  3. Coloque a massa nos moldes ou papeis próprios para cupcakes, eu utilizei formas de silicone para evitar que agarrasse, sugiro caso não utilizem silicone que untem as formas com óleo de coco ou spray para untar. Encher cada molde para que fique 3/4 cheio.

  4. Leve ao forno durante 15 a 20 minutos, até estarem dourados e ao introduzir um palito no centro, saia limpo. Deixe arrefecer durante 10 minutos. E desfrutem!

Today's recipe, as you may imagine was found on Pinterest and originally from Running with Spoons blog. The cupcakes are made with bananas, oats and natural greek yogurt...all things I love! There super soft and fluffy and since they have tiny chocolate chips it gives you the immediate sense that your having a dessert!

Ingredients:IMG_9058

  • 1 cup plain greek yogurt

  • 2 ripe bananas

  • 2 eggs

  • 2 cups rolled oats

  • 1/4 cup brown sugar

  • 1 1/2 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1/2 cup chocolate chips

Instructions:

  1. Preheat oven to 400 Fahrenheit.

  2. Add all ingredients except for the chocolate chips to a blender or food processor and process on high until oats are broken down and batter is smooth and creamy. Stir in chocolate chips by hand.

  3. Poor batter into cupcake molds, filling each mold about 3/4 the way full. I used silicone molds to avoid the cupcake sticks, in case you don't use silicone be sure to grease the molds with coconut oil or cooking spray.

  4. Bake for 15 to 20 minutes, until top of cupcakes are golden and a toothpick inserted in the middle comes out clean. Allow to cool for 10 minutes. And enjoy!
